Yes, another secret link. There was no "r" for "recipes", so I took the next best thing, the first "c".  Makes total sense to me, anyways. Welcome to my world.

We all have our little secrets, mine is that sometimes I actually 'like' to cook. So let's share some our favorites.

 

      P.J.'s Friday Fish Bake

Oven to 425. Put two pieces of cod in a pretty baking dish (can be individual serving baking dishes). Make sure they are thawed, the cooking time will work better that way.

Make Crumbly-topping  mix by taking a small handful of Ritz-type crackers and gently smashing them into crumbs.  Add about 1 Tbs red wine, mix good, then just hang on.....

Remember the cod filets?  Good. Next, take any-where's between a half and a whole stick of butter (yes, but it is Lent, after all) pop it in the microwave and heat it 'till it's bubbly.  Dribble  a small amount of the hot butter into the crumbly-mix and mix.  You want the crumbly-mix to feel barely moist, almost dry.  The rest of the butter (most of it) take and pour over the cod filets. Shake a bit of salt and pepper on the project. Next, sprinkle some crumbly-mix on top of the filets. Don't over do this, you still want to be able to see the filets through the crumbs. You will have extra crumb mix left over, sorry for the wasted crackers--and wine.

You are ready to pop it in the oven for 20 minutes-take or give.  The fish is done when it flakes-away nicely at the edges.
